Instructions
- Cook ground beef over medium-high heat, season with salt and pepper. Drain excess grease as needed.
- Add diced onion and minced garlic, sauté.
- Stir in tomato paste and cook for 1 minute.
- Add marinara sauce, beef broth, parsley, oregano, and basil. Bring to a simmer, then reduce heat to medium-low.
- Stir in broken lasagna noodles. Simmer uncovered for 10-12 minutes and stir occasionally until noodles are tender.
- (Optional) Stir in the spinach until it is wilted.
- In a small bowl, combine ricotta, mozzarella, and parmesan. Season with salt and pepper.
- Serve. Ladle hot soup into bowls, top with cheese mixture, and garnish with parsley and parmesan if desired.
